7 MInute Cauliflower Fried Rice

Ingredients :: 

4 cups cauliflower rice (buy it already "riced" at Trader Joe's or Safeway)

1 TBSP coconut oil

1 large carrot chopped

1/4 onion chopped

3 chopped garlic cloves

1 TBSP chopped fresh ginger

2 TBSP coconut aminos

1/4 cup chicken bone broth (I use Epic brand)

Optional :: 1/2 lb chicken or ground turkey 

Instructions :: 

Heat a large frying pan and add coconut oil, onions, garlic and ginger. 

Once browned, add your chopped carrots, cauliflower rice, coconut aminos and bone broth. *Add chicken or ground turkey here if adding a protein

Fry all of this together in your pan for 5 minutes (slightly longer with protein).

You know it's ready when all of the liquid from the bone broth has evaporated and the cauliflower begins to turn slightly brown from frying.
