Broccoli Sweet Potato Soup


2 TBSP grass-fed butter

1 yellow onion, chopped

5 garlic cloves

2 TBSP turmeric

4 cups of chicken broth

2 bags (Trader Joe's) or about 4 cups of broccoli lightly chopped

1 medium sweet potato

1 teaspoon salt

Olive oil to garnish


Place a large pot over medium and add butter, onions and garlic. Sauté until the onions and garlic begin to brown. 

Add chicken broth, salt and then all of the broccoli to the pot. Bring to a boil and then simmer on low, covered for about 10 minutes. 

While the soup is simmering, poke holes in the sweet potato and cook it in the microwave for about 4 minutes or until soft. 

If you have an immersion blender, use it to blend the soup, along with the sweet potato, together in your medium pot. If you do not have an immersion blender, transfer the sweet potato and entire soup mixture into your blender and blend on medium until creamy. Then, pour your mixture back into the pot on the stove. 

Heat for 3-4 minutes and then serve with a dash of olive oil and salt on top!
