2 large heads of organic cauliflower
5-7 garlic cloves (depends on how garlicky you like your "potatoes")
Himalayan or Sea Salt and Pepper
2 TBSP grass-fed butter
Fill a large pot with about 2 inches of water and place a steamer insert inside.
Place a lid on the pot and bring the water to a boil. While the water is boiling, chop up all of your cauliflower (stems included).
Once water is boiling, place cauliflower and garlic in the steamer and salt liberally.
Let the cauliflower steam (lid on) for about 10 minutes. Don't worry, you can't overcook it!
Once the cauliflower is steamed, use tongs to remove it from the steamer and place it in your food processor along with the butter and pepper. You may have to do this in batches depending on how large your food processor is.
Puree the cauliflower and butter until smooth.
Place in a large bowl and serve!
