CrockPOT SHREDDED BEEF STEW

 

When life gets crazy, crockpots can be your best friend. All you have to do is throw all of your ingredients in, push go and then you come home to a beautifully cooked dinner at the end of the night. Amazing!

Here is served mine over more kale and then added some cilantro to the top. So yummy!

Ingredients :: 

3 lbs grass-fed round roast 

1 1/2 cups of beef broth

1/2 cup diced white onions

1 bunch of dino kale, cut

4 large carrots diced

8 cloves of garlic

1/2 TBSP paprika

Splash of red wine

1/2 TBSP salt

Instructions :: 

Add all ingredients to your slow cooker/crockpot and cook on high for 10 hours. I like to set mine in the morning and then it's ready when I walk in the door for dinner!

Once your beef is done, take a fork and knife and shred it as best you can. Since it's cooked slowly over a long period of time, it should shred pretty easily. 

Serve over cauliflower rice, spaghetti squash, more kale or enjoy alone as a stew!
