Detox Kale chicken Soup

 

Ingredients ::

1 white onion, chopped

5-7 garlic cloves, chopped

Grass-fed butter or ghee

2 TBSP chopped rosemary

1.5 - 2 lbs of chicken. I like to take the chicken meat from my bone broth that I make at home and add to this soup. 

3-4 large carrots, chopped

1/2-1 cup of chopped tomatoes. I like heirloom!

About 5-6 cups of chicken bone broth, preferably homemade and cooked for 24-48 hours. If not, then buy organic. 

3 cups of kale 

1/2 TBSP turmeric

Sea salt and pepper to taste

Directions :: 

 

Melt butter or ghee in a soup pot

Once hot, add onion, garlic and rosemary and sauté until golden brown

Add in carrots and sauté for another 3-4 minutes. If chicken isn't already cooked, then add chicken in with carrots. 

Slowly add chicken bone broth, kale, tomatoes, turmeric, sea salt and pepper to the pot. 

Bring back to a boil and then let simmer on low for an hour. 

Serve over cauliflower rice or topped with avocado for a delicious meal!
