Pie Crust :: 

2 cups almond flour (I like the blanched almond flour from Trader Joe's) 

1/4 tsp salt

2 TBSP coconut oil

1 egg

Instructions :: 

Place all ingredients in your food processor and pulse until it forms a ball

Remove the dough and place in the middle of your 9.5 inch pie pan

Press the dough into the pie pan to create your crust

Make your pie filling and then once that's ready, pour it into your crust and bake. Enjoy!

 

Pie Filling :: 

1 can of organic pumpkin (15oz)

3 eggs

1/2 cup coconut milk

1/2 cup honey

1 TBSP pumpkin pie spice

1/8 teaspoon salt

Instructions :: 

In your food processor combine the pumpkin with your 3 eggs. 

Then, pulse in coconut milk, honey, pumpkin pie spice and salt. 

Once everything is blended well, pour the mixture into your unbaked pie crust .

Bake at 350 for 40 minutes or until slightly browned on top. 

Let set for about an hour before serving. This sits nicely in the fridge too so you can make it ahead of time.
