Holiday Persimmon Appetizer
The perfect Thanksgiving or Holiday appetizer that is ready in less than ten minutes. This healthy hors d'oeuvre looks really fancy, is full of festive colors and powerful flavors. I've also done this with baked sweet potatoes as the base rather than persimmons but I've found that the persimmons give this a nice crunch. Enjoy!
5 large persimmons - slice the persimmons flat so that they work as a circular base for your appetizer. I can get about 5-6 slices out of a large one.
4-6oz goat cheese - Feel free to use more or less depending on your taste but I don't like to overwhelm the persimmon with too much.
1 cup crushed walnuts
1/2 cup pomegranate seeds
Raw organic honey
Slice persimmons flat so that they create a circular base
Place small amount of goat cheese (about 1-2 tsp) on each persimmon and flatten slightly. Use more or less here depending on your taste
Sprinkle walnuts and pomegranate seeds over the goat cheese
Drizzle with a little bit of raw honey
