These lamb chops are so yummy and really easy to make on a cast iron pan inside or outside on your barbecue. I cooked these up with some fresh veggies that I just roasted in the oven and it was so tasty together. Enjoy! This recipe is for two people.
Grill Lamb Chops:
Heat cast iron skillet and coat with grass fed butter
After skillet is hot, place 2 lamb chops on the skillet and cover.
You want to cook them for about 10-12 minutes depending on how strong your grill or flame is. Check regularly and remove once there is just a little bit of pink in the middle.
While your lamb chops are cooking, begin to make mint sauce
1-2 cloves of garlic
7-10 large mint leaves
2-3 tablespoons of olive oil
Salt to taste
Add salt, mint leaves and chopped garlic to mortar and pestle. Pound 5-7 times so mint begins to break up
Add olive oil and continue to pound until desired consistency.
I like mine kind of chunky so I didn't pound it as much.
Once this is done, spread it over the top of your lamb chops. The lamb chops should be super hot and fresh off the grill when you add this. That way the lamb heats up the sauce. Enjoy!
