Middle Eastern Chicken
By now you can probably tell that I'm a big fan of crock pot recipes. It's nearly zero effort to throw crock pot recipes together but you get big returns. It's a win win!
2.5 lbs chicken breasts or thighs (I prefer thighs which makes the recipe a little bit more moist)
2 onions chopped
4 whole garlic cloves
2 TBSP olive oil
1/2 cup chicken bone broth
2 TBSP ground sumac or paprika
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp ground cloves
A pinch of saffron
Mint to garnish
Add all ingredients (minus the mint) to your slow cooker.
Season liberally with salt and pepper.
Cook on low for 6 hours or until chicken shreds fairly easily.
Serve over cauliflower rice (one of my favorites), roasted veggies or a big salad!
