No Bake Energy Bites

About two months ago, I found out that I have an allergy to eggs. Although eggs are one of the healthiest things you can eat, my body just doesn't seem to agree with them right now. Whenever I'd eat eggs I'd get really bloated and my stomach would hurt all day. Booo! Eggs were always my go-to at breakfast because of their amazing health content so you can imagine that breakfast has been quite a challenge recently. In an effort to come up with a new on the go breakfast recipe (because you can only drink so many smoothies) I made these incredible energy bites. They take about 10 minutes to make and are the perfect snack or on-the-go breakfast. Plus, they taste like cookie dough but are packed full of healthy fats, protein and fiber. I just made about 20 of them to last me the entire week!

Makes 8-10 Energy Bites. I'll eat 1 for a snack or 2-3 for breakfast depending on how hungry I'm feeling. 

Ingredients :: 

1.5 Cups of Raw, Unsalted Almonds

1 Scoop of Protein Powder (the protein powder that you choose is important, as the ingredients should be all natural, plus it should taste really good). I used Vega protein powder in one recipe and then Ora Organics in another. 1 TBSP Coconut Oil

1 TBSP Avocado Oil

4 TBSP Water

Toppings :: Try sprinkling bites with chia seeds, goji berries or coconut flakes for added crunch.

Directions :: 

Add all ingredients to a food processor and pulse for 3-5 minutes. 

You may need to stop the food processor several times during the 3-5 minutes to adjust the batter and make sure that it is all getting evenly processed. 

Batter is done when it feels nice and squishy, almost like cookie dough. 

Use a spoon to scoop out dough and roll into small bites. I used a 2 TBSP spoon for each bite. 

Sprinkle with your topping of choice and enjoy! 

To pack when you are on the go, place them in a small tupperware so that they don't get squished. Enjoy!
