Craklin' Chicken

Nom Nom Paleo sure knows how to make a mean chicken! This recipe is incredibly easy and so so tasty. Perfect for one of those nights when you've got about 10-15 minutes to cook and you want to use minimal brain power. Enjoy! 

Nom Nom Paleo's Craklin' Chicken:

Serves 4


8 bone-in, skin-on chicken thighs (approximately 4 pounds) - I've also used skin-on chicken breasts when I can't find skin-on chicken thighs. 
1 tablespoon Diamond Crystal kosher salt - I've also used a big, flaky salt crystal here instead when I can't find this specific brand. 
2 teaspoons ghee
2 teaspoons seasoning blend of choice (optional)


Flatten chicken with a meat pounder. Be sure to remove any bones if you didn't get boneless. 
Turn chicken skin-side-up and sprinkle salt on the skin so it’s seasoned evenly. 
Heat a cast iron skillet over medium high-heat. 
Melt the ghee in the pan and place chicken thighs skin-side down in the hot pan. 
Add seasoning to top of chicken as they lay in pan if you choose to season. Sometimes I’ll add season salt or curry powder if I’m looking for a bold taste. 
Let the skin fry undisturbed until crispy and golden brown (7-10 minutes) rotating the pan 90 degrees at the halfway point to make sure the heat from the burner is uniformly distributed. I suggest you cover the pan as this can really splatter!
Flip the chicken and cook for 3 more minutes or until cooked through. Enjoy!
