This is a muffin recipe from the wonderful Elana's Pantry blog. She has some amazing stuff on there so I refer to her a lot. These muffins are completely grain free, paleo, and refined sugar free and I LOVE them!
Healthy Blueberry Muffin Recipe:
1/2 cup of raw organic coconut flour
1/2 tsp baking soda
1/2 tsp celtic sea salt
1/3 cup raw organic honey
1/3 cup grapeseed oil
1 TBSP vanilla extract
1 cup blueberries
Combine coconut flour, baking soda and sea salt
Separately combine eggs, honey, grapeseed oil and honey. Blend with a whisk by hand
Mix dry and wet ingredients
Gently add in blueberries
Place batter in lined muffin tins
Bake at 350 for 20-25 minutes
Makes 12 super tasty muffins!
