Peppermint Buttermints

This is a recipe I adapted from Empowered Sustenance and I love it. When I first saw that these were really BUTTER mints, I had a hard time believing they would be that good. But oh my, was I wrong! These are delicious and nutritious! Made from only 4 ingredients, these little fat bombs keep you full, burn fat, curb cravings and level out your blood sugar. Basically they are a total win, win! 

Ingredients :: 

1/2 Cup Coconut Oil

1/2 Cup Unsalted Grass Fed Butter ( I like Kerrygold) 

2 TBSP Raw, Organic Honey

1/4 tsp Organic Peppermint Extract 

Instructions ::

Mix all ingredients together in a bowl. The butter should be room temperature and the coconut oil should be close to liquid. 

Once you've mixed everything together in a bowl, transfer to a plastic bag. 

Cut the tip of the plastic bag and squeeze out small dots onto parchment paper. 

Place parchment paper in the fridge for slightly softer mints or in the freezer for a hard candy. Enjoy! 

I love these as an afternoon pick me up with some tea or as a dessert before bed.
