Late Summer Salmon

This salmon dinner is one of the easiest and tastiest things you can make. The entire recipe really only takes about 15 minutes to make and it's packed full of healthy fats, fiber and protein. The perfect combo! I suggest you cook extra to have for lunch or a night when cooking just isn't in the picture. Enjoy!

Ingredients

Serves 2

1 lb wild salmon

1 package of Trader Joe's cauliflower rice. You will find this in the frozen section

2 TBSP organic pesto

1 lemon

1 TBSP butter

Thyme

Salt

Recipe

Preheat oven to 350

Rub salmon with fresh lemon juice and then place butter on top of each filet. Sprinkle with salt and thyme. 

Place salmon in oven for 12-15 minutes until flaky. 

While salmon is cooking, place frozen cauliflower in a pan on medium/high heat and begin cooking with butter. 

Once cauliflower rice is defrosted, add in the 2TBSP of pesto and continue cooking until warm. 

Place cauliflower rice on a plate and place salmon filet on top. Add more thyme and salt to taste and enjoy!
