Sun Dried Tomato Chicken Pasta
1 medium spaghetti squash
1 TBSP butter or ghee - I like Kerrygold grass-fed butter or Tin Star foods ghee
4-6 garlic cloves
1/2 of a white onion
4 ounces sun-dried tomatoes in oil
1 LB free-range, organic boneless chicken breast
1 teaspoon sea salt
1 teaspoon red pepper flakes
3/4 cup chicken bone broth - add more or less depending on the consistency you're looking for
Fresh basil to garnish
Cut spaghetti squash in half and microwave face up for 12-15 minutes. You can also place in the oven at 400 for 20-25 minutes but I find that the microwave is much faster and it tastes exactly the same.
Add butter or ghee to a pan and saute garlic and onions.
Add sun-dried tomatoes and cook for 5 minutes. Then add chicken broth.
Place chicken, salt, pepper flakes in pan with sun-dried tomatoes and chicken broth and cook through on medium/high heat.
Add spaghetti squash threads and mix so everything is in one pot. Sit and let reheat for 5 minutes. Garnish with fresh basil.
