Sweet Potato Chips
One of my wonderful clients came up with this sweet potato skin recipe and I'm in love with it. The skin from sweet potatoes is the healthiest part of the veggie but most people don't eat it. So, this recipe packs some amazing nutrition and is also a great snack or party appetizer. I also love these as an alternative to popcorn or chips when I'm relaxing on the couch. To make a large batch you really do need a lot of sweet potatoes so these are better made in small batches, unless you feel like peeling 20 sweet potatoes. Happy snacking!
3 large sweet potatoes
2-3 TBSP Coconut oil, olive oil, butter or ghee. Depends on what kind of flavor you're going for but all of these oils taste really great
Preheat oven to 400
Peel all three sweet potatoes and place peels in a bowl (you can use the leftover actual potato for a dinner side).
Melt your fat of choice and pour over the sweet potato peels.
Add salt and mix so that peels are evenly covered.
Place peels evenly on a baking pan lined with parchment paper.
Cook for 10 minutes and then place on broil for about 5. These should get really crunchy on be just on the verge of burning, so be sure to watch them carefully.
Let cool for 5 minutes and then enjoy!
*You can also do a sweet version of this recipe by adding cinnamon and a smidge of honey
