Very berry almond muffins
2 tablespoons melted coconut oil
1 tablespoon honey
½ cup unsweetened apple sauce
1 teaspoon vanilla
½ cup almond milk
2½ cups almond flour
2 TBSP coconut flour
1 teaspoon baking powder
3/4 cup chopped raspberries and blackberries
Preheat oven to 350 and line muffin tin with 12 liners
In a bowl, mix coconut oil, honey, applesauce, eggs, vanilla, and almond milk.
Add in coconut flour, almond flour and baking powder and stir until there are no chunks
Slice rasberries and blackberries and then mix into batter.
Pour batter into 12 muffin tins evenly. Top each muffin with one blackberry
Bake for 20 minutes and enjoy!
